Mexican Grilled Cheese

Inspired by travels to Cancun Mexico, Riviera Maya

This lovely twist on an old classic spices things up literally!

We got our first taste of Mexican Grilled Cheese during amazing visit to the Mexican State on the Yucatan Peninsula, and we can’t wait to return. We know Ace & Kingston will fall in love with Zona Hotelera and all of Quintana Roo, just as we did!!!

Here is our slight twist on the Mexican Grilled Cheese sandwich that we had while staying there.

What you need:

  • 1 medium sweet yellow pepper, chopped
  • 4-6 diced jalapeno peppers
  • 1 medium green pepper, chopped
  • 2 teaspoons olive oil
  • 8 slices rye bread or bread of choice (Cuban bread adds a different crisp)
  • 2 tablespoons mayonnaise
  • 1 cup fresh salsa, well drained
  • 3/4 cup shredded Mexican cheese blend
  • 2 tablespoons butter, softened

What to do:

In a mixing bowl add all ingredients besides toast together.

Heat skillet and slightly butter bread, after that, smooth mixture from the bowl onto the slices of bread, slap together and add to the skillet until golden brown.
