One of our most memorable camping trips ever was going to Volcano National Park, on the Big Island of Hawaii. This National Park feels like Home – as we’ve been several times. Ace even got to go on a field trip with his elementary school, where he and his fourth-grade classmates were able to spend the night camping and got to go bowling at the park’s bowling lane!!

We’ve been going to Volcano National Park for so many years now with many different relatives and it is such a memorable trip to look forward to each time. We love seeing how much Ace & Kingston have grown in between trips.

We love setting up our tent, packing lunches, dinners and board games to keep us busy. It’s vacations like these that we tend to laugh the most and learn about each other. Next time we go we plan on taking our bikes and actually biking around the entire park for miles.

There are so many fun things to do, like hiking all of the many trails, walking through Lava Tubes, checking out the beautiful craters, and exploring nature. If you want to splurge and not rely on your packed dinner and tent, you can always try the famous Volcano House Restaurant and Hotel that offers a fabulous menu and extraordinary views of the crater.

One of the two restaurants in Volcano House is Uncle George’s Lounge. It’s a Kilauea restaurant and bar where you can catch the big game while savoring a diverse selection of local and domestic beers, signature cocktails, wines, and Instagram-worthy views.

Below is an amazing recipe recreating our version of a Volcano House Treat.

Big Island Style Signature Mai Tai

  • Captain Morgan Spiced Rum
  • Malibu Coconut Rum
  • POG Juice – (Don’t Mess Around With Imitators – Get The Real Stuff)
  • Lime Juice
  • Kraken Black Spiced Rum Dark (Optional: Floater – If You Really Want To Feel It)

The Mai Tai is a cocktail based on rum, and orange juice.

If you are looking for a real deal Hawaiian Mai Tai get the real stuff. Seriously, don’t waste your time with Curacao liqueur or imitation junk juice, make it this way and your taste buds will thank you – Your Welcome.

Mix Together The Following Ingredients

  • 1 1/2 Oz Captain Morgan Spiced Rum
  • 1 1/2 oz. Malibu Coconut Rum
  • Fill Glass With POG Juice
  • Splash of Fresh Lime Juice
  • Optional: Floater of Black Spiced Rum on Top

Shake all ingredients except the Black Rum together in a mixer with ice. Strain into glass and float the Black Rum onto the top. Serve on the rocks. Garnish with a lime peel and/or a pineapple spear. Serve with a straw.
