There are so many wonderful amazing restaurants and beautiful sights to see on the Big Island of Hawai’i. At the top of our list collectively is Volcanoes National Park. It’s Ace’s absolute favorite national park. It’s also a family favorite because of the ability to do so much all in the same vicinity. Hawaii Volcanoes National Park is on Hawaii Island (the Big Island). At its heart are the Kīlauea and Mauna Loa active volcanoes. Extending from sea level to 13,681 feet, the park encompasses the summits of two of the world’s most active volcanoes – Kīlauea and Mauna Loa. From wilderness adventures to short walks and scenic drives, there’s plenty to do in Hawaiʻi Volcanoes National Park. Camping, hiking, crater rim drive tour, biking, chain of craters road tour, and even bowling!!! (Yes they have a bowling alley, hotel and restaurant also at your disposal, for you Glampers).
Volcano House Hotel provides a spectacular view, gift shop and dining, so make sure when you are touring Volcanoes National Park, make sure to stop in, and try a signature Mai Tai cocktail while peering over Halema’uma’u Crater! Colin has creatively re-created the feeling of the volcano smoke and tasty flavors with his spectacular grilled pizza treats. Here’s a recipe to get you up and running towards the wonderful world of Grilling pizzas, but beware it’s extremely addictive!!
Ingredients
Homemade Pizza Dough:
- 1 cup + 2 Tablespoons Warm Water approximately 110 degrees F
- 1 3/4 teaspoon Yeast
- 1 teaspoon Sugar
- 2 1/2 – 3 cups Bread Flour can substitute all-purpose flour
- 1 1/2 teaspoons Salt
- 2 Tablespoons Olive Oil
Honey BBQ Chicken Pizza:
- 1 lb. Chicken Breast cut into small pieces
- 1 Tablespoon Olive Oil
- 2 Tablespoons Fresh Squeezed Lime Juice
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 cup Spicy BBQ Sauce
- 1/4 cup Ranch Dressing
- ½ cup Honey
- 2 cups Mozzarella Cheese shredded
- 1 cup Cheddar Cheese shredded
- 1/4 Red Onion sliced into thin slices
- 1/2 Bunch Cilantro
½ pineapple chunks optional
Instructions
- In a small bowl, dissolve your yeast in warm water. Make sure that your water is warm (not too cold, not too hot, approximately 110 degrees F).Add sugar and stir. Let proof for 10 minutes. You should see it start to foam to know it’s working.
- In a separate mixing bowl, combine flour, salt, 1 1/2 T. oil, and water yeast mixture. Add only 2 1/2 cups of bread flour and watch for it to start pulling away from the bowl to know it’s ready. If you need more flour, add a 1 Tablespoon at a time until the dough comes together into a solid ball.
- If the dough is too dry, add additional water, 1 tablespoon at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
- Grease a large bowl with remaining olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and roll out into circle. Let it rest for 10 minutes.
- Preheat oven to 450 degrees.
- Meanwhile, in large skillet, add olive oil and cook chicken over medium heat for 7-9 minutes or until cooked through. Remove from heat and add lime juice and salt and pepper.
- In small bowl, combine spicy bbq sauce and ranch dressing.
- Place pizza crust on round pizza stone or pizza pan. Spread creamy bbq sauce over pizza crust. Top with mozzarella and cheddar cheeses, red onion, and optional jalapeno.
- Bake for 14-19 minutes, until crust is golden brown and cheese is melted.
- Top with fresh cilantro.
