He dubs this version Island Citrus, Feta & Basil Pizza—a vibrant homage to the fresh and fragrant flavors of the Caribbean, brought to life with the smoky magic of the grill.

Island Citrus, Feta & Basil Pizza — The Recipe from The Loft Kitchen

Ingredients

Dough

  • 3.5 cups “00” flour (finely milled Italian flour)
  • 1.25 cups lukewarm water
  • 1 tsp fine sea salt
  • ½ tsp active dry yeast
  • 2 tsp sugar
  • 2 tbsp olive oil

Citrus-Honey Sauce

  • 3 tbsp white miso paste
  • 2 tbsp honey or agave nectar
  • 1.5 tbsp fresh lime juice
  • 1 tsp rice vinegar
  • 2 tbsp crème fraîche or sour cream
  • 1 tsp finely grated fresh ginger

Toppings

  • Zest and thin slices of 1 orange and 1 lemon (for bright citrus notes)
  • ½ cup crumbled feta cheese
  • 1 cup fresh basil leaves, torn or whole
  • 1 small shallot, finely minced
  • 1 small fresh chili (Fresno or jalapeño), thinly sliced (optional for a kick)
  • 1 cup microgreens (arugula or mixed)
  • ½ cup shredded mozzarella (optional for melt)
  • Toasted sesame seeds
  • Thinly sliced scallions

Method
