Trying To Get This One In Before We Shut The Grill Down For Winter
For The Dough: Use Our Grilled Pizza Dough Recipe
Pizza Ingredients:
- 2 Cups Shredded Cooked Chicken
- 4 Ounces Cream Cheese (Room Temperature)
- 1 Teaspoon Ranch Seasoning Mix
- 1 Cup Buffalo Sauce – We Like Frank’s
- 16 Ounces Shredded Mozzarella
- 1/4 Cup Blue Cheese Crumbles
- 2 Tablespoon Chopped Green Onions
- Ranch Dressing or Blue Cheese (For Dipping)
- 2 Tablespoons Fresh Cilantro Chopped (Optional)
Instructions:
- Preheat the grill to medium-high heat about 10 minutes prior to placing the pizza doughs on.
- In a large bowl, toss the shredded chicken with the Buffalo sauce.
- Microwave the cream cheese until very soft and melty. Stir the ranch seasoning into the cream cheese to combine.
- Place the dough circles on the hot side of the grill. Let cook for 1-2 minutes, then flip with tongs, moving to a cooler spot on the grill (about medium heat).
- Immediately spread the cream cheese mixture over the crust evenly.
- Top with Buffalo Sauce & coated chicken.
- Sprinkle all but 1/4 cup of the cheese over the crust.
- Top with the Mozzarella Cheese.
- Cook for 3-4 more minutes, constantly turning and moving around the grill so as not to burn the bottom. Once the cheese has started to melt, transfer your pizza to the upper rack of your grill.
- Sprinkle with blue cheese crumbles & green onions and cilantro (optional).
- If you like your dough a little crispy, cook for a few more minutes on the upper rack. If you like your dough a little more chewy, cook on the upper a little less.
- Remove the pizza from the oven and transfer to a cutting board. Wait 3 to 5 minutes before slicing and serving, to allow the cheese to set slightly.
- Serve with the Ranch or Blue Cheese Dressing on the side.
