It’s time to relax, relate and release!

Ever look at a child’s face when they are handed their favorite double scoop special order of ice cream with brownie when they are going in for their first bite? Witnessed a baby figuring out the art of the magical peek a boo smile? Observed a chef’s reaction to tasting their utterly magnificent creation? A dancer’s locked in poise and resolve as they hit their groove? How about my very favorite, the look on a child’s face along with their parents reaction to walking the great pathway on main street towards Disney Worlds magic castle. These are all moments of sheer bliss that transcend thoughts, stress and reason. They are true moments of joy.

These moments when felt, often cannot be explained, duplicated on demand or manufactured. They are simply the feeling of being elated that feels like sprinkles of sunshine on your skin on a beautiful summer day. So often as we grow older, especially these days, we are so inundated with reports to file, jobs to do, bills to pay and goals to conquer, that we pass by so  many opportunities for sprinkles of joy! 

Stop and enjoy the beautiful sight of a bee pollinating an exotic flower, the perfect shade of fuchsia. Appreciate the sunrays streaking down from the clouds in heavenly fashion. Take time to appreciate the beautiful light rain on a hot day. Slowly eat and enjoy your meal with your family, savor every bite and the conversation. Truly look into the eyes of a loved one and see their soul as you dive into deep conversation. 

Find a park and jump on the swings, grab an indulgent ice cream scoop, howl at the moon, play a board game, watch a comedy that will make you laugh uncontrollably. Take time to enjoy life and yourself! You deserve sheer pleasure, so go out and grab it! It’s in these little moments that help to create a lifestyle of feeling like a holiday or vacation is always on the horizon. Hence you are truly living a holiday rising inspired life!

Chocolate Banana Pops

Inspired by Frozen Banana popsicles at Disney World

Looking for a great way to cool off and satiate your sweet tooth? Look no further than this addictive snack that is a big departure from your normal go to’s. Prepare these frozen banana treats and be a hero in your neighborhood or party sphere. We were first introduced to this delightful treat while wondering around the Magic Kingdom at Disney World in Florida. They apply a bit more chocolate (which I am still trying to perfect their recipe). But here is our Loft Kitchen take on it!

All you need is:

2 medium-long bananas

2 cups milk or white chocolate chips

4 tablespoons cinnamon

2 tablespoons sweetened coconut flakes

4 tablespoons chopped almonds or granola

All you have to do is:

1. Peel the bananas and cut them in half. Using Popsicle sticks or cake pop sticks, insert the stick on the bottom of the banana about halfway up. Place bananas on the parchment paper (about 1-2 inches apart) then freeze for 30 minutes.

2. Next, warm up the chocolate chips for 60-90 seconds. Mix in cinnamon.

3. After removing bananas from freezer, place them into the bowl of melted chocolate. You can use a spoon to add more chocolate up the sides of the banana. Lay the chocolate-covered bananas back onto the baking sheet.

4. Now for the fun part sprinkle the almonds or granola and coconut flakes over the bananas. Freeze again for 10-15 minutes. Finish your amazing desert with a chocolate or (caramel drizzle) or any other of your family favorite toppings and enjoy!!!

Mexican Arroz Con Pollo

Inspired by an amazing night out on the town in Cancun, Mexico

While on our way to scout a potential site to open a Del Sol store in a sleepy little village and cruise port town of costa Maya, We first disembarked in Riviera Maya, Cancun Mexico.

This colorful and vibrant city is beautiful and bustling. A mecca for tourism and a mixture of old world charm give the city a very unique and appealing draw.

Colin and I were taken aback by the amazing smells and inviting smiles that permeated the air. There were so many lovely restaurants to take in and sights to see and enjoy. One night, and it was one of those “Where to next” nights that seemed to last a second but actually quickly escaped to dawn… we happened upon a small corner festival in  Parque de la Palapas, a famous city park near the center of town. Here we had the most memorable experience.

We shared drinks and contemplated our next big life move while sharing arroz con pollo and a Mexican Grilled Cheese sandwich.

Here is our version of Arroz Con Pollo

What you will need:

  • 1/4cup olive oil
  • 1 1/2lb boneless chicken thighs, cut into 1 inch pieces
  • 1 teaspoon salt
  • 1 tablespoon of freshly squeezed lime
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons pepper
  • 1 ½ cups long grain rice
  • ½ cup diced onion
  • 1 Poblano chile, diced
  • 2 Serrano chiles, 1 minced and 1 left whole
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 3 Roma tomatoes, diced
  • 3 cups chicken broth
  • 1 teaspoon cumin
  • 1 tablespoon tomato or chicken flavored bouillon granules
  • 1 cup diced green pepper
  • 1 cup diced yellow pepper
  • 12 corn tortillas
  • 6 lemon wedges
  • 2 cups homemade or store bought salsa, if desired
  • ½ cup cilantro (Cilantro is just the perfect garnish as well for Mexican dishes)

What to do:

  • 1 Heat oil over medium heat for 5 minutes in a heavy pot. Season the chicken pieces with the first 4 dried spices listed. Cook chicken for 3 minutes per side and remove from the pot. Remove about 1 1/2 tablespoons of excess oil out of the pot.
  • 2 In the same pot, add rice and toast for 3 minutes. Add the onion, Poblano, Serrano, and carrots, cook for 3 more minutes. Add lime juice, garlic and tomatoes, stir well to combine and cook for 1 minute.
  • 3Add the broth, cumin, and bouillon granules, and bring to a boil. Taste for salt, reduce heat slightly, and add chicken pieces back into the pot, spaced out evenly. Add the whole Serrano pepper to the dish, cover and cook at a low simmer for 12 to 15 minutes. Add diced peppers on top.

Taking a few steps back to take giant leaps forward

I’m sure we have all been in a position where we have felt like we are hitting our head against a huge roadblock brick wall that can’t be penetrated. You know that feeling that no matter how fast you’re running your legs seem like jelly and you just can’t seem to get to the finish line. Sometimes it is in these exact moments when we need to take advice from our dear friend the tortoise and pause or even slow down to the point of shutdown. Now this doesn’t mean quitting the race, more like stopping to take a deep breath, grab water, and just breathe.

For some, this is the absolute hardest thing to do because you feel like to pause is to lose momentum and cost you the lead in the race. However the energy you need to complete the race, goal, task is so depleted when you just push your self on fumes with no plan that you sacrifice your end goal and could possibly jeopardize your efforts to enter and complete future races. So instead of viewing taking “a time out” or stepping back to evaluate as weak look at it as having the strength to trust your instincts, expertise and surroundings to know that the wisest thing you can do, is let go and back up. Take the time to reassess your strategy, get in tune with your mind, body and spirit and make sure that your core team is in lock step.

It’s actually the smartest thing you can do at that moment. Because at that very second while everything is cloudy and coming at you a million miles an hour, you cannot focus and see the whole big picture clearly. It’s in this moment that you have to take a step back, clear your thoughts, disengage, relax and when you’re ready re-enter the race with a renewed sense of purpose, passion, determination, and good energy, Go for it full steam ahead, like a rhino!

Now even though you might feel like where you were once leading the pack of the race you’re now the middle of the crowd or even dead last, you are now actually finishing the race with better stride and with more enthusiasm. This will allow you to go even further faster than you ever thought possible before! Because now with clear eyes, clear vision, and clear lungs, your foundation is stronger oh my will your path become extremely visible and those persistent obstacles that once blocked your path will now be easily defeated. It is here my friend, in this very moment that you find a pep in your step, a rhythm to your actions where everything seems to be coming together with clear tunnel so you can envision the finish line ahead, and it does not seem so far away. You’re not focused on being last or in the middle or even worried about the position you were in when you were struggling to swim up stream before you took your much needed break.

How amazing!!!  Just taking that step back and approaching the finish line now it is amazing because one-by-one you’re knocking off all of those old hurdles….Yes indeed you are on your way passing those other racers now one by one. Remembering how silly of you to feel that they were taking your place as you took your pause as now, one by one, you’re passing them to get back to the position that you once were when you had to take your pause and now you’re creeping up to the front of the pack but not to compare yourself to them.  No Sir, you are running for you and only you, not even focussing on who you are passing as you ascend to the glorious finish line. You are now hurling yourself towards your goals, the finish line is at hand and that and that alone is your motivation, that is your fuel. Wow oh wow, how exciting!!!

So when in doubt and bogged down with choices, too many voices in your head or externally, remember it is okay to take a break. It is okay to say you know what I’m lost, I’m confused, I don’t know what steps to take next. just pause, breathe, open your eyes with a new sense of vision, purpose and dedication and then run your little heart out for all of your goals!

Mexican Grilled Cheese

Inspired by travels to Cancun Mexico, Riviera Maya

This lovely twist on an old classic spices things up literally!

We got our first taste of Mexican Grilled Cheese during amazing visit to the Mexican State on the Yucatan Peninsula, and we can’t wait to return. We know Ace & Kingston will fall in love with Zona Hotelera and all of Quintana Roo, just as we did!!!

Here is our slight twist on the Mexican Grilled Cheese sandwich that we had while staying there.

What you need:

  • 1 medium sweet yellow pepper, chopped
  • 4-6 diced jalapeno peppers
  • 1 medium green pepper, chopped
  • 2 teaspoons olive oil
  • 8 slices rye bread or bread of choice (Cuban bread adds a different crisp)
  • 2 tablespoons mayonnaise
  • 1 cup fresh salsa, well drained
  • 3/4 cup shredded Mexican cheese blend
  • 2 tablespoons butter, softened

What to do:

In a mixing bowl add all ingredients besides toast together.

Heat skillet and slightly butter bread, after that, smooth mixture from the bowl onto the slices of bread, slap together and add to the skillet until golden brown.

Enjoy!

Weekend Exploration in your own backyard!

So often we hear people saying that “Until guests come to town, they never experience or take advantage of their own city in which they live. It is so easy to give into routine and shuffle from school/work/kids sports or regular trips to the store and hobbies, that we often neglect the benefits and events in our own radius. Always dreaming or planning to venture off somewhere that we are not can sometimes lead to not seeing and appreciating the beauty of where we are now.

I have spoken to several people who live in New York, who have never been to the Statue of Liberty, The top of the Empire State Building or Sylvia’s on 125th. Tons of people who live in Hawai’i have never visited the top of Mauna Kea observatory and countless residents of Michigan have never seen the great Mackinaw Bridge.

Too often we push things aside, convincing ourselves that we need to save up for lifetime vacations that will cost thousands of dollars and take years of our lives to save up for when taking the time to appreciate the very events and attractions in our own neighborhoods, cities and states can be just as fulfilling and memorable.

So we actually ventured, yes, while hosting family and friends out to stroll the beautiful city we have been in since October. We along with the Riley’s (Founder and CEO of Harlem Blue Craft Beer) from New York took this opportunity to see the beautiful Mile High City of Denver we have been in for a while and had a truly memorable and fun time!

Strolling the famous 16th street, taking in the magic of Coors Field, checking out Tivoli and its craft beer creation and enjoying the best burger lunch on the outdoor patio of Illegal Burger was a fantastic day that our families enjoyed tremendously.

We encourage you to take advantage of the very city you happen to be in. Visit your local museums, parks and monuments. Treasure the things that are within an hour radius of where you live, and you may find that your Holiday or vacation surrounds you daily!!

Escape to Black Sand Beach

Punalu’u, Hawai’i

Hanging out at the secluded and serene Punaluʻu Beach beach also known as Black Sand Beach. is a magical experience that must be shared by all. Punaluʻu Beach is a beach between Pāhala and Nāʻālehu on the Big Island of the U.S. state of Hawaii. The beach has black sand made of basalt and created by lava flowing into the ocean which explodes as it reaches the ocean and cools. This volcanic activity is in the Hawaiʻi Volcanoes National Park. Punaluʻu is frequented by endangered hawksbill and green turtles, which can often be seen basking on the black sand.

We often visited in between trips from Honaunau down to basketball tournaments in Kau.

It is a tradition of ours to stop in the Punalu’u Bakery for some sweet treats after a long and exciting day in Kau which is at the southern tip of the Island. Many people often say that Key West is the southernmost point of the United States. But it is not. The southern part of the Big Island is. 

Grab some malasadas and a great burger from the Punalu’u bakery and the Southern Most Bar in the United States!!

There are so many beautiful things to explore on the Island of Hawai’i. Make sure to take a long trip to the southern side on your way to the Volcano National Park to view the always erupting lava flow. Include a stop to the beautiful sleepy town of Punalu’u to enhance your Hawaiian stay!

Inspired by our travels to Costa Maya, Quintana Roo, Mexico

If you are looking for a fantastically flavorful way to add some punch into your taco night, look no further than this traditional Mexican dish that will never disappoint!

On our journey from Cancun, Mexico in the beautiful and lively Yucatan Peninsula in Mexico to Costa Maya ( The lovely small cruise port town in Quintana Roo). It’s a quaint, easy going town with a rich character all its own. With friendly locals welcoming avid divers from all over the world and excited tourists passing through to the mayan ruins of Talum or heading off of their cruise ship for a taste of life in Mexico, the feel and flavor of Costa Maya will stay with you forever.

Once a rural fishing village Costa Maya  slowly evolved into a hidden gem of a destination for those looking for something slower paced. This sleepy town along with it’s neighbor Mahahual provide just that. If you are traveling to the Mayan Pyramids and have already visited Tulum and want something a little different other than the bustling and vibrant Cancun to the north then look no further than Costa Maya!

We have recreated a version of a tantalizingly tasty meat dish, barbacoa  that we fell in love with while staying here. We pull out this recipe  for parties and taco night. Cooking it in the slow cooker allows for all of the ingredients to beautifully mesh together adding irresistible aroma to your home, that will have everyone begging to eat sooner rather than later. 

We love to present it as a wonderful option for creating your own tacos along with 

 arroz con pollo (yellow rice with chicken), beans, and for desert delectable churros! Check the Loft Kitchen on holidayrising.com for the recipes for our version Arroz con pollo and churros.

We were fortunate to spend time with our Hawaiian Family Friends and Stingray O’hana Jaqcue and Jazz and we made this delicious which was a hit!! Here is the Recipe for our Slow Cooker Barbacoa, just add a Sol beer or Margaritas to complete the experience and enjoy!

Ingredients  Needed:

  • ▢4 lbs beef brisket or beef chuck roast will also work
  • ▢2 Tbsp vegetable oil
  • ▢3 – 4 chipotle chilis in adobo
  • ▢1 1/4 cups beef broth
  • ▢4 teaspoons minced garlic
  • ▢1 1/2 Tbsp ground cumin
  • ▢1 Tbsp dried oregano
  • ▢3/4 tsp salt then more to taste
  • ▢1/2 tsp ground black pepper
  • ▢1/4 tsp ground cloves
  • ▢1/4 cup fresh lime juice

Instructions 

  • Cut the beef into large cubes. In a large skillet over medium high heat add the vegetable oil and sear the beef on each side. Transfer to your slow cooker.
  • In a food processor add adobo chilis, beef broth, garlic, cumin, oregano, salt, pepper, cloves, and lime juice. Pulse until blended and pour on top of the meat.
  • Cook on low for 8-9 hours or high for 6 hours. Shred the meat with two forks and turn on warm.
