That’s why Vacations not only let you reset, but actually make an improvement to your health.  There are a number of scientific backed benefits of taking vacations.

LOWER STRESS

It’s no secret that the day to day grind of our complex work focused lives contributes to greater levels of stress.  More Work = More Stress.  Less Work or Time Off From Work = Less Stress – pretty simple to understand. 

However, for those that need Scientific Evidence of this, please note that multiple scientific studies performed by the American Psychological Association have concluded that vacations work to reduce stress by removing people from the activities and environments that they associate with stress and anxiety (i.e. your jobs).

The key to successful relationships is spending time with other people.  Preferably, meaningful time. Unfortunately, our personal lives often play second fiddle to our busy professional lives. 

How often have you told your kids you can’t play with them now or do something they want to do together because you have work?  How many games, activities, teacher meetings have you missed because your boss wanted you to get something done?

We’re not just talking about kids here either. 

How many times have you told your spouse you were too busy, or too exhausted to take a walk together, or cook a meal together?

A vacation allows us time to reconnect with the people we actually want to have in our lives. Traveling is especially good for deepening bonds between people: vacations are quality time for relationships and shared experiences, good and bad, help bring people together.

Brain function is not fixed; it is both malleable and adaptable to change.  Your brain can form new connections, and produce new cells as well as sculpt existing connections to be more efficient.

Neuroplasticity refers to the brain’s ability to change over time because of one’s life experiences and thinking patterns. 

Neuroscientists have found that brain structure is altered by chronic exposure to the stress hormone cortisol, which can be a major contributing factor to anxiety and depression. Feelings of calm arise from time away from work and relieve stress, which allows the body and mind to heal in ways that it couldn’t if it were still under pressure.

Additionally, consider your daily routines.  Generally, we find ourselves on repeat, doing the same thing over and over. That doesn’t allow us much mental flexibility; we’re less likely to be spontaneous or creative, especially in heavily routinized jobs. And when we are asked to be creative, we’re likely to find that we’re tapped out; our brains are tired.   Just as vacation gives our bodies a break, it also gives our minds a chance to recharge and create new connections. This is especially true when we get out and explore. Making our own schedules, being spontaneous and learning new things actually energize our brains, giving us new experiences to analyze.

An exhausted mind is a dull mind, whereas rested minds tend to be more creative, which allows you to come up with new and inventive ways to solve problems.  Additionally, being rested also gives us the mental resilience to keep working, even under stress, which can help us achieve goals or meet deadlines.

Did you know that eating certain types of foods, can actually help boost your mood?

Feeling lethargic throughout the day, or do you need something to help you get going Midway through the day?

There have been several recent studies published showing that by eating certain foods you can dramatically increase not only your waistline, but your mood and attitude as well!

According to Healthline, just by adding certain foods into your daily routine you can automatically increase your chances for a brighter outlook and better outcome for your day.

Too often we reach for certain foods for comfort, or snacks on items thinking it will instantly give you a boost of energy, which it does….until, of course, you crash.

Foods like sugar, sodas, candies and things of that nature that we reach for when we’re down. They’re quick, easy, and they work….in that instant, but leave you with extra pounds and not any more energized down the line.

However, for some of us, we take a bite thinking it’ll remind us of our childhood and we’ll instantly be happy and transformed. However, this is doesn’t work in the long run either.

Fortunately, studies are now showing that there are foods that can give you that same effect, but instead of an instant quick head rush from sugar, you can have a long-lasting and meaningful boost in your mood and behavior. 

For our family, who love to snack, and always need energy as we are running from one practice or museum or outdoor park to the next, we try to incorporate some of these Super Food staples into our weekly eating regimen.

Here are a few of the foods and items that can help boost your day as:

  1. Fatty Fish -Fish like salmon and albacore tuna are rich in two types of Omega-3s and DHA.

These are linked to lower levels of depression and contribute to the fluidity of your brain’s cell membrane and play key roles in brain development.

Foods like yogurt, Kombucha, and sauerkraut are high on the list of foods that can instantly give your mood a boost. About 90% of your body’s serotonin is produced in your gut, a healthy gut may correspond to a good mood. Foods like these are rich in probiotics that support your gut health. For us, we often turn to yogurt as the foundation of our smoothies and they are delicious!!

Try a using a few super mood foods, blueberries, oats, and yogurt! The bonus is, it tastes just like a Blueberry muffin!! 

3. Grab A Chiquita Banana – Bananas can help to turn your frown upside down!

They are high in vitamin B6, which helps the feel-good neurotransmitters like dopamine and serotonin do their job and make you smile! They also contain a large amount of fiber. 4. Oats – Oats are a whole grain that can provide sustainable good spirits.

You can try oatmeal, muesli, and our personal favorite, granola. They are an excellent source of fiber. Fiber helps slow your digestion of carbs, allowing a gradual release of sugar into the bloodstream to keep your energy levels stable.

Oats are also a great source of Iron. For many people who have iron deficiency anemia, oats help to boost your iron intake and substantially improve your day!

Pocket Closet Bunk Beds

Here is a great idea for grabbing additional space and adding a ton of creativity and fun!!

We converted this bed room with a traditional closet into a home theatre, but we did not want to lose the ability to have kids sleep in the room if we needed extra space. Sooooo, we turned the closet into bunk beds, and added a cool rock climbing wall so the kids could have a fun way of getting to the top bunk.

It worked out perfectly, and the kids love it.

What Is This Holiday Rising Thing?!!

Do you all know the feeling of a vacation smile? It’s a different kind of joy right?

Everything about vacations is just a little better. The sun shines a little brighter. Your conversations are a little deeper, carefree & heartfelt. You get a little closer with the loved ones around you. It’s a moment in time that you are fully present and aware. For a small moment in time, life is good.

Why not have that feeling every day? We believe that you should and that you can. Europeans often phrase taking vacations as “Going on Holiday”. So we adopted that notion with a twist believing that by either taking on a job, project, or passion that makes you feel as if you are permanently on vacation or freeing up your time so that you can pursue what truly matters to you, is constantly living in a state where your Holiday is always on the Horizon. Hence, ‘Holiday Rising’!

We are an adventurous entrepreneurial family who enjoys traveling, learning, and exploring the great outdoors together. Most of all, we love laughing and playing in this backyard called the world.  Since marrying about 13 years ago, Colin and I (Malaika), along with our boys Ace and Kingston have traveled the world in search of a better way to live.

As of 2021 we’ve been to over 30 countries and visited 49 states (we’re coming for you Alaska).

Along the way, we became coffee farmers and roasters, tour guides, property managers, consultants, worked aboard cruise ships, and owned several companies. We are certainly not creatures of habit and like to push our envelopes in terms of change and growth so we invite you on our journey. We are now forging a new path ahead for ourselves and for others.

We look to inspire an overall lifestyle change for anyone that is looking for something else out of their life. For the people that no longer want to be part of the cog and really want to take advantage of their time here on earth. The Holiday Lifestyle is not for everyone for sure, but if you decide it’s for you, we will show you how you can live like you are on Vacation every day!

We want to share the tips and lessons we have learned along the way, as well as our mistakes, in an effort to create a happier society one smile at a time. We are still learning and growing and welcome insight and different cultural experiences from people everywhere. Nothing in life is guaranteed and time is certainly not promised, so we try our best here to enjoy every second of it like we were on a Permanent Vacation!

Grilled Pizza Dough Recipe

Inspired By A Love Of All Things Pizza

We have tried A LOT of different pizza dough recipes. We’ve tried recipes for grilling, thin crust, deep dish, Chicago style deep dish – you get the idea.

There are recipes that call for all purpose flour, some that call for bread flour. There are some that use honey, or some that use sugar. Some that use olive oil, and some that use vegetable oil. There are a lot of recipes, and a lot of permutations of recipes that you can use for every type of pizza. We’ve tried A LOT of different recipes, subsequently, there have been A LOT of failures in the pizza crust department.

Granted everybody’s palate is different, so feel free to apply our philosophy of “You Do You” here, but in our opinion, not all pizza crusts are created equal.

We, do however, hold to the fact that you can cook a pizza 5 different ways (open fire vs. oven vs. in a pan in the oven vs. pizza stone, etc.) with the same ingredients and each one will taste differently. We believe that a thin crust pizza is not the same a wood fired thin crust pizza which is definitely not the same as a deep dish pizza. Honestly, we can cook a different style of pizza every day for 30 days, and not feel like we’ve repeated the same meal once.

Again, though a lot of trial and error, we feel that this is the BEST PIZZA DOUGH FOR THE GRILL.

If there is one thing we know here at The Loft Kitchen – It’s Pizza!

Ingredients:

  • 4 1/2 Cups Bread Flour, Chilled
  • 2 Teaspoons Salt
  • 2 1/4 Teaspoons Instant Yeast
  • 1/4 Cup Extra Virgin Olive Oil
  • 1 3/4 Cups Water, Ice Cold (40°F)
  • 1 Teaspoon Garlic Powder
  • 2 Tablespoons Honey

INSTRUCTIONS:

  1. Stir together the flour, salt, instant yeast Olive Oil, Garlic Powder, & Honey in a 4-quart bowl. With a large metal spoon, stir in the oil and the cold water until the flour is all absorbed. If you are mixing by hand, repeatedly dip one of your hands or the metal spoon into cold water and use it, much like a dough hook, to work the dough vigorously into a smooth mass while rotating the bowl in a circular motion with the other hand. Reverse the circular motion a few times to develop the gluten further. Do this for 5 to 7 minutes, or until the dough is smooth and the ingredients are evenly distributed. The dough should clear the sides of the bowl but stick to the bottom of the bowl. If the dough is too wet and doesn’t come off the sides of the bowl, sprinkle in some more flour just until it clears the sides. If it clears the bottom of the bowl, dribble in a teaspoon or two of cold water. The finished dough will be springy, elastic, and sticky, not just tacky, and register 50 to 55F.
  2. Sprinkle flour on the counter and transfer the dough to the counter. Prepare a sheet pan by lining it with baking parchment and misting the parchment with spray oil (or lightly oil the parchment). Using a metal dough scraper, cut the dough into 4 equal pieces. You can dip the scraper into the water between cuts to keep the dough from sticking to it. Sprinkle flour over the dough. Make sure your hands are dry and then flour them. Lift each piece and gently round it into a ball. If the dough sticks to your hands, dip your hands into the flour again. Transfer the dough balls to the sheet pan, Mist the dough generously with spray oil and slip the pan into a food-grade plastic bag.
  3. Put the pan into the refrigerator overnight to rest the dough, or keep for up to 3 days.
  4. On the day you plan to make the pizza, remove the desired number of dough balls from the refrigerator 2 hours before making the pizza. Before letting the dough rest at room temperature for 2 hours, dust the counter with flour, and then mist the counter with spray oil. Place the dough balls on top of the floured counter and sprinkle them with flour; dust your hands with flour. Gently press the dough (By Hand – don’t use a rolling pin) into flat disks about 1/2 inch thick and 5 inches in diameter. Sprinkle the dough with flour, mist it again with spray oil, and cover the dough loosely with plastic wrap or a food-grade plastic bag. Now let rest for 2 hours.
  5. At least 10 minutes before making the pizza, warm up your grill. Try to keep it around 450 degrees, but you will have to monitor your grill the whole time while cooking your pizza so as not to burn the dough.
  6. Make the pizzas one at a time. Dip your hands, including the backs of your hands and knuckles, in flour and lift a piece of dough by getting under it with a pastry scraper. Very gently lay the dough across your fists and carefully stretch it by bouncing the dough in a circular motion on your hands, carefully giving it a little stretch with each bounce. If it begins to stick to your hands, lay it down on the floured counter and re-flour your hands, then continue shaping it.
  7. Brush both sides of your dough with Olive Oil.
  8. Place your dough (1-2 at a time) onto the grill. Let sit for 1-2 minutes while the bubbles form on the top. Once bubbles start to form, slide your metal spatula underneath and flip. There should be a little bit of char marks on the top now.
  9. Immediately top with your desired toppings, cook for 3-4 more minutes, constantly turning and moving around the grill so as not to burn the bottom. Once the cheese has started to melt, transfer your pizza to the upper rack of your grill.
  10. If you like your dough a little crispy, cook for a few more minutes on the upper rack. If you like your dough a little more chewy, cook on the upper a little less.
  11. Remove the pizza from the oven and transfer to a cutting board. Wait 3 to 5 minutes before slicing and serving, to allow the cheese to set slightly.

We took him very seriously and enjoy our parfaits a great deal here in the Loft Kitchen. It is a regular brunch staple!

Parfaits are not only delicious, but they also contain amazing fruits, berries, and yogurts that help improve your spirits. Yup, parfaits cover your mind, body, and soul. Who knew a parfait could be so transformative…..well, Donkey may have.

Here is a wonderful Parfait recipe that will be sure to delight you!

All You Need Is:

  • Honey Vanilla Greek Yogurt
  • Bananas
  • Blueberries
  • Raspberries
  • Blackberries
  • Pineapple
  • Strawberries
  • Granola
  • Cinnamon
  • Whipped Cream

Well, start your lovely parfait off with a pillow bottom. Yes, a slight layer of whipped cream on the bottom is such a nice surprise at the end.

Then add a layer of Granola topped with yogurt. Then add another layer of granola topped with berries and pineapple. Repeat until you are at the top of your glass, or bowl.

Finally, add your whipped cream, and top it with a dash of cinnamon. It will taste as good as any ice cream sundae.

You get all the deliciousness, but in a healthier version.

Spicy Tuna Pepper Wrap Time!

Tuna is an amazing way to get some Omega 3s into your family diet. It’s yummy and when prepared as an alternative to a lunch meat sandwich, is a welcomed treat.

Quick Tip When Having Tuna: Drain your canned tuna and then place in the refrigerator overnight. Taking out the tuna about 20 minutes before preparing takes away the chill, but gives the tuna a fresh taste that pops.

Here is a great pepper tuna wrap recipe that everyone enjoys as a great lunchtime meal. It’s quick and simple, which is how we like our recipes here.

Ingredients:

  • Solid White Tuna In Water
  • Garlic Powder To Taste
  • 1 Teaspoon Turmeric
  • Red Pepper Flakes To Taste
  • Whole-Wheat or Flour Tortillas (For A Healthier Version: Use Butter Lettuce To Wrap)
  • 1/2 Cup Sliced Green, Red, and Yellow Peppers
  • 1/4 Cup Sliced Red Onion
  • 1 Teaspoon Extra Virgin Olive Oil

Directions:

In a side bowl mix tuna with garlic powder, turmeric, and red pepper flakes.

Gently coat each tortilla with olive oil and then craft your wrap with the tuna mix.

Add your peppers and onion then wrap with your tortilla or butter lettuce and enjoy!

I like to pair the tuna wraps with Homemade Kettle Chips
