Sweet Caramel Buttery Popcorn Recipe from the Loft Kitchen

Inspired by our fun times spent at beautiful Bogus Basin in Boise, Idaho

Imagine a picturesque skyline with beautiful snow-capped mountains. The Sun shining heavenly through the crisp white clouds. Snow so fluffy it looks like the freshest baby powder you’ve ever seen. We were fortunate enough to see this view on the weekends while watching Ace take snowboard lessons from the ‘the Name Droppa’ ski instructor (That was his actual name, with it boldly printed on the bottom of his board) at beautiful Bogus Basin in Boise Idaho.

Ready To Shred

One of the biggest treats that we looked forward to, after bundling up in our best ski gear, was watching Kingston learn how to walk in his big snow boots and snacking on delicious treats from the lodge.

We also anticipated the joy of amazing hot cocoa (with a pinch of cayenne pepper in it…You know, a lil’ spice in unexpected places). Along with the delicious hot cocoa, we would have addictive, buttery caramel popcorn. Now you definitely need to work these sweet treats off either on the slopes or in the gym, but trust that it’s worth every scrumptious bite!

It will be so much fun to return to Bogus Basin but until we get there we’ve recreated this caramel popcorn recipe that takes us back there in memory. Try this Poppin sweet treat!

Ingredients

  •  10 Cups of Popped Popcorn
  •  Salt
  •  1 Cup Butter (Sweet Cream Salted)
  •  1 Cup Light Brown Sugar
  •  2 tsp. Vanilla
  • 1 tablespoon corn syrup
  •  1/2 tsp. Baking Soda
Not To Sound Too Corny….But I Need That Corn!

INSTRUCTIONS

  • Salt popcorn and set aside.
  • Melt 1 cup of butter in a medium saucepan over medium heat.
  • Add 1 cup of brown sugar and corn syrup, stir until thoroughly mixed.
  • Stirring continuously, bring the butter and sugar mixture up to a boil on medium heat.
  • When it reaches a boil allow it to cook for 5 minutes without stirring on medium heat.
  • Add the 2 tsp. of vanilla at the 4 minute mark and stir to mix.
  • Continue to boil for one additional minute and then add the 1/2 teaspoon of baking soda.
  • Drizzle the caramel mixture over the popcorn. Use a spoon to gently fold the popcorn with the mixture until the kernels are all covered.
  • Pour the popcorn out onto a cookie sheet covered with an aluminum foil liner.
  • Let the popcorn cool.
  • Serve and Enjoy!
